How much does your body absorb?

I am 6 months out(open RNY)and down 106lbs. Start weight 265lbs. now 159lbs. I know your body only absorbs so much of the vitamins we take in..Does that go the same for carbohydrates,sugars and fats? I find it really hard to keep my carbohydrates down. Everything I see has like 20 to 45 grams. I have read on here that you should stay below 15 or less..How do you do that? I eat very little everyday maybe 800 calories or so. Also no sugar. But how can I cut my carbohydrates down? Thank you for any and all help anyone can give me.
