Good Morning. Gluten free?

Is anyone else trying to stay gluten free? I was diagnosed with Celiac as a kid but that was in the dark ages so I don't really know for sure. Anyway, since being on these boards I've learned that you really don't outgrow it the way the docs told my parents and gluten may still trigger autoimmune problems even though you don't appear to be symptomatic. Some other good benefits of going gluten free is that you can eliminate some carbs and reduce the tendency for a gassy stomach. Just thought I'd ask and see if anyone is trying this or would like to.

No gluten issues that I know of here.  But I have never been off it to see if it make a big difference.  I think Tazz is gluten free. 

Need to finish wrapping presents and make final plans for Christmas.  I have been so on the outside, I feel really out of touch this year.  With my little bit of energy each day, trying to do the work stuff I have to get done, my exercises, then home stuff, and Christmas falls at the end of the list.  It would be easier if the work stuff wasn't all changing 1-3-12 and I can't put that part off.

It is so hard to be completely gluten free.  I tried cooking for a friend of my son, and it was a total disaster.... When he travels with us, he always brings his own food.

I eliminated wheat when I had my surgery but for the last several months I have made a conscious effort to be gluten free.  It is a lot easier then I thought.  Most labels these days identify if there is wheat in something and even the restaurants are putting out gluten free menus.  I made the decision because of my problems with carbs but I have found that I have no cravings when I don't eat gluten and my intestinal issues are greatly reduced.
Today I am going to take a placement test for going back to school and I am very nervous.  I haven't been in school in over 20 years and my memory is shot so I don't remember much.  I looked at the practice test last night online and all I could think was "I'm screwed".  I'm mostly worried about math.  I was never great in math even on my best day but now I can barely add 2 + 2.  Critter swinging would be appreciated.  Even if I pass I am very nervous just about going back to school.  I keep telling myself that I am too old and stupid to learn anything.

I'll swing for you.  But you may be very surprised.  I went back to school and got a second masters while my kids were little.  Even with working full time and having 2 small kids and a hubby, I did fine.  I think I could concentrate better or something.  Adults have more connections for new information to hook on to than kids.

I haven't thought about going gluten free. 

I have been wanting to try Quinoa, but everytime I look at it at the grocery store it looks like it has a tremendous amount of carbs and I'm not sure if I am even looking at the right product that everyone talks about being so good and having less carbs.  Maybe it is the good carbs instead of bad carbs - just not sure.

Work today, I really need to get payroll done today... because I have to travel tomorrow.

Quinoa is a grain, so is completely carby.  BUT that said, it also has more protein than wheat, which is why lots of folks prefer it over wheat.  For me, it also doesn't trigger carb cravings like wheat-based things do (and some corn-based and oats).

If you decide to try quinoa, note:  it's bitter unless you rinse it really well before cooking with it.  Rinse it in cold running water in a fine sieve, for a really long time, several minutes, then when you think you've rinsed it enough, rinse some more, LOL!

 I don't quite get the whole gluten free  thing .  OK  I can mix up muffins and they are guten free ...but if I  make  the same basic ingredients plus a bit of yeast into a scone dough that gets  kneaded for two minutes  to get a nice crumb .. I'm  making  gluten ?


so ravioli is better for me than bread ?
