HELP - LOOKING FOR SOUP RECIPES
Stracciatele~(italian for "rags") It is like Egg Drop Soup
heat 4 cups chicken broth in a pan (for protein)
Beat 3 large eggs in a boil (or you can use the equivalent of Egg Beaters) (also for protein)
Chop approximately 1 cup spinach, kale, collard or mustard greens (for iron) and place in boiling broth. When the broth begins to boil again, stir the broth and while stirring, add the beaten eggs. Keep stirring...this makes the "rags".
Add chicken or another vegetable if you prefer, but it is great just like it is....
I add parmesean cheese when I am ready to serve it!
It is chock full of iron and protein and it is quick....

I am making a NEW soup as we speak!
You can use either chicken or beef...I am making it with beef tonight,
~Beef or Chicken cut into small pieces
~Beef or Chicken stock
~Celery
~Carrots
~Onions
~1 Large can of Stewed tomatoes drained
~2 bags of multi soup beans (I use Stop and Shop brand of 16 beans per bag)
~1/2 bag of barley
~Season to taste
**You can make this pot as big or as small as you want by adjusting the size of your ingredients.
My daughters boyfriends' mother made this with chicken and it was DELICIOUS!
