The obvious question is: what do you have laying around? You can make soup from pretty much any pantry raid. Here is one I did most recently:
Garden gave me: 4 small onions, 2 green peppers, carrots, and 5 tomatos
Freezer gave me: 2 packs of veggie crumbles and one Boca Sausage
Pantry gave me: beef broth, thyme, Italian Seasoning, 2 sprouting "use me quick" potatos and 1/2 box barley.
So, chop veggies, cook til soft, add the fake meat and broth and let simmer until taters and barley were ready.

So one i do all the time is chicken soup in the crock pot.
1 whole chicken and about 5 broth cubes
1 pk baby carrots
5 stocks of celery
1 onion
1 clove of garlic
and whole wheat noodles if you like.
in the morning put in the crock pot the chicken and the broth with water to cover.
coo****il done about 6 hrs. or until the chicken falls off the bone. Remove all the bones save the broth. cut up the veggies and the garlic use a little oil to Cook the onion and garlic in a pan add to the crock pot also add the cut up veggies. cook about 1 or 2 more hours in the crock. the last 1/2 hour add the noodles if you like them.yummy on cold days and high in protein. and everything cooks all day makes your house smell so good.

I also like the crockpot chicken soup-yum! If you don't feel like messing with cooking a whole chicken, you can also use one of those roast chickens from the supermarket. Saute some onions and whatever veggies you like, cook in some broth until done, then add the cut-up chicken. It's great! I find that a squeeze of lemon or lime juice at the end really brightens up the flavor. I have a rosemary bush outside and I usually throw in a stalk or two of rosemary. As it cooks the leaves will naturally fall off, and you can just remove the stalk at the end.

It's great-just brown 1 lb of hamburger, drain out the grease if there is any, then add cut-up onion, celery, carrots, cabbage, tomato, green pepper, yam, zucchini, or whatever you want. Saute for a while until the onion is translucent, then add a little broth of your choosing, salt, pepper, spices or herbs if you want, and a small can of crushed tomatoes or tomato sauce. Coo****il ready and, optionally, stir in some Greek yogurt or sour cream before serving. It's so tasty and easy!
