Thought I'd post this here for the grads that don't frequent the main board. I just got so excited I needed to share with everyone.

Ummmm....Looks good enough to eat... two!  Here's a idea to play with and get your creative little mind working....

I can't find my recipe...I wanted to post it and lost it....But I will find it!  Til then get yourself a can of pumpkin....protein powder, egg beaters, pureed cottage cheese,  a little whole wheat pancake flour, sf vanilla or cream cheese flavored pudding mix, stevia or davinci sf vanilla syrup, cinnamon and nutmeg, I used a little real maple syrup (might just try SF butterscotch pudding instead and skip the maple syrup, but that was good with though),  one can evap milk and a mini bite pan...and OMIGOD!  They were about 25 calories, 6 g of protein and the entire batch made 48 little bites...I gotta find my derned notes...Someone cleaned my desk off! But those were the basic ingedients I used....It all started with a can of Libby's Pumpkin.   I KNOW you can come up with something fabulishous!   :)  Until I find my recipe or get off my butt and try again...Mine flopped a little...so I need to get them a little denser.   But the little sunken spot made a nice place for a little plop of SF whip cream!  LOL

Oh lordy, these sound delish!!  I love anything "pumpkin"!  I'm not creative about throwing things together, so I'm gonna be watching to see if you come up w/ the recipe!   (The protein powder--I'm assuming you mean either vanilla or unflavored?)

I am reading this at 11:40 p.m. and am seriously salivating.  I haven't looked at your blog before--which I now realize will be a whole new site to obsess over!--so you've probably talked about the Vitamuffin mix before, but where do you get it?  I've never seen anything like it, but of course, I've never looked for it.

My only question is, "Can you move to FL and be my neighbor?"  That way when you make those beautiful creations, I can be your taste tester.
