Great Chicken recipe to share
Hey guys, I came up with a great way to do chicken today that I wanted to share. I have been staying away from chicken for a while since it was so hard to get down, hard to digest, and just dry...and I hate boiled chicken...but today I started craving it so I came up with this recipe.
I get the really thin sliced breasts from Perdue, available at Kroger, and I season them with some garlic and herb spice rub from McCormick and then slide them into a heavy plastic storage bag and pound them really thin with a meat mallet.
I beat one egg and put it in a shallow dish. Then, I take 1/3 cup of cashews and grind them in the processor until they are bread crumbs consistency.
Dredge the chicken, which will be very thin and almost falling apart, in the egg and then the cashews. Don't try to coat the chicken with the cashews because there is not enough to completely coat them, just flavor them and barely "crust" them.
Then, fry the chicken breasts in just a teaspoon of olive or peanut oil. It only takes a few minutes to fry so the chicken does not toughen up. Also, since they cook so fast, the one teaspoon of oil is enough for all the chicken.
I am only 6 weeks out and this was very easy to eat.
This recipe was enough for five pieces of the thin sliced chicken.
