Countdown 'till turkey day!!! what is everyone doing? going out of town, staying home and cooking? We are going to my Dad's this Thanksgiving. Which is fun because I will get to spend some time with them but, my Dad is ANTI - TURKEY! UGH, I will be having a roast day, lol. Anyway I hope everyone enjoys the holiday and try not to give in to much! Hugs, Jacqueline

My sister has graciously invited my husband and I to her house. She says I don't even have to bring anything. I told her I would not be eating much. I have a good restriction with no fill. So I will be having Turkey Breast a spoon of dressing and maybe if room some of the pumpkin pie filling.

My family had their turkey day this past Saturday. I did very well. Pretty much stuck with eating turkey. I did have a bite of some of my other favorites. I also did a hard cardio workout the morning of so I could have a bite or two without feeling guilty. I do plan on going to see Happy Feet and the Christmas lights at Opryland (if they're up) while we are both off from work. We hardly get to spend time together because I work during the day and he works at nights so we'll get to spend time together have a happy thanksgiving jacqueline! April

I will be staying home. We do ours on Saturday at my place. Thursday my older son, wife, and grandson will have dinner with her family. My younger son, will have it on Thursday his lady friend, 2 small girls, and her family. So I'm not doing the turkey this year as they all have to leave after dinner to head home. Turkey makes you want to sleep, and i want them to be awake and alert. So I am getting a cured ham put it in the over on Friday evening so It will be done by noon on Saturday. Phillip works midnights and has to work Sunday evening, Scott has to pick up his 4 yr old son at 10am on Sunday. I need to go by tomorrow and get the food that I'm going to fix. I have the stuffing, a 12" apple pie, and a 12' sweet potatoe pie, plus I have green beans that I canned over the summer. I have the potatoes, need to get sweet potatoes for the casarole. The stuff for cole slaw. Oh and the famous Waldorf Salad. Can't forget that. Most of this I can eat just in small quanities, as for pumpkin pie, there won't be as I'm getting it in ice cream instead, just add the cool whip. Any left overs on the pies, the boys can take them home when they leave. We're going to do turkey on Christmas eve instead of this week. Every year I cook a big turkey covered in cream of mushroom or cream of chicken soup. Put it in the over on 200 degrees the night before, the next morning, it's off the bone, and the gravy is made. Also here's a tip, cook your turkey breast side down. It will stay most vs putting the dark meat down. The dark meat is always juicy and contains more fat. Baking it upside down with the breast side down, allows the white meat to stay juicy, I always debone it prior to serving it. They like the white meat on one tray and the dark on another. But that will be for Christmas Eve. Have to go to the pain clinic so will catch up on you turkeys later. Love Kathy

I'll be up around 5 tomorrow morning so I can get the turkey in the oven. I'm cooking a 24 pounder so it will take a while. I have to make the stuffing before I can even get it in the oven though. Like I told my mom, once the bird is in the oven, I can take a nap! We have 18 people coming tomorrow. It's going to be a mad house! This is what Thanksgiving should be though. Hubby and I are both from large families so it just doesn't feel like Thanksgiving without a crowd. I'm sending leftover pie home with folks too. Depending on how much other stuff is leftover, I may be sending a lot of other stuff out the door with family too. I've got the Ziploc containers all ready. Susan

Hi! I just had turkey day with my immediate family. I'm eating pretty light since surgery is in a couple of weeks. I spent all day yesterday, all night, and all day today cooking and baking. I cleaned out my cabinets of all the post-surgery no-no's and attempted to use them all up this holiday. I did pretty good, I baked five pies, one cake, a sweet potato casserole, candied yams, Rachael Ray's brussels sprouts, spiced apples, flan w/caramel sauce, a black forest cake, corn muffins, dressing, and a cranberry salad. I have been up for 40 hours straight so I am almost delerious but it was worth it. My mom is very ill and slips in and out of lucidity and this morning she had a bad spell. I get the feeling she may not be here for Christmas so I wanted to give her a special gift early. She has wanted a train set her entire life so this morning I surprised her with a train set and she looked like a kid...her face lit up and she had me set it up on the dining room table for her. It was priceless! I wouldn't take a million dollars for the look on her face. So it was a good day! Sorry so long!
