If you guys havent made these, THEY ARE YUMMM  and no flour ..  I loved them ..I havent tried these with Splenda Laureen ...have you ?  really fast and yummy though and I use crunchy PB in mine .

Sensational Peanut Butter Cookies

18 cookies

1 cup peanut butter (see note)
3/4 cup  sugar
1/4 cup brown sugar
1 egg
1 teaspoon baking soda
1/2 teaspoon vanilla
additional sugar for rolling

Preheat oven to 375 degrees°F.

Mix all the ingredients up in a bowl. Roll walnut-sized pieces into balls and roll balls in the additional sugar. Place on a parchment-lined baking sheet and flatten slightly with a fork in a crisscross pattern. Bake for 10 minutes. Remove and let cool before removing from baking sheet.

ENJOY  IN MODERATION OF COURSE

LOL Shirley....yes you are sweet!!

The recipe sounds wonderful. I however am going to pass for now as I am trying to cut back on snacking. I love Peanut Butter cookies so this wouldn't be good for me to have around right now. I copied the recipe and put it in my recipe file.

Baking is therapy for me I guess as I bake all the time and give away ..  I very seldom eat and if I do, one piece and STEP AWAY FROM THE PAN  :)

Replace the regular sugar with splenda -- works great!!!

I've never been a big fan of pb, until post wls, so no, have not tried them, but these sound like they'd be good and I will try them with splenda and somehow I think they are something I could have in moderation, because while I like pb a lot better nowadays, I still would only eat it in small amounts. . .

Have any of you tried a product called PB2.  It's dried peanut butter so much lower in fat.  You reconstitute with water.  I may have to play around with this recipe when I'm allowed to have chewables.  I use the PB2 in my protein shakes for a different flavor.

I havent heard of that Cindi... How does it taste and what us the texture once mixed.  OH and where do you find it ?  I live in a PODUNK town in Ala and we have a store , a redlight and a postoffice ,,,,,Kidding , it is a little bigger than that but we have Walmart and a couple other small grocery stores and NOOOOOOOOOO  not from here lol but it is home for now ..

I live in an even smaller town.  No Walmart.  I order it online from a company called netrition.com.  You control the consistency by how much water you add to the powder.  I liked it and used it to make peanut sauce for a chicken satay recipe.
