Freaky Friday...What's Up?
We had two nice rains during the night, and the yards have greened back up nicely already. Very humid this morning, but okay in the a/c.
Was down to my last clean towel, so washed a big load, plus took linens off my bed and they are now in the dryer....have to fold the towels yet.
A friend brought me some Kroger Carbmaster yogurt last evening, AND the biggest darn zucchini I've ever seen -- looks like a baseball bat...So guess I'll shredd it up and make something....will probably freeze some, but I don't think it freezes well -- gets really watery. Found a recipe online for muffins that I can substitute out the oil and sugar and use applesauce and splenda instead. Has walnuts and dried cranberries in, so sounds yummy. Will give some to my neighbor who looks in on me daily and brings me my mail.
That's about it for me today -- special thoughts of peace and strength for all my OFF peeps.

I freeze zucchini all summer long in anticipation of the long winter. I simply squeeze a bit of the water out when putting it in casseroles and breads during the winter. I have a couple of zucchini quiche and zucchini pie recipes that I absolutely love. I add different ingredients seasonally like shredded carrots, a bit of cooked left over asparagus, Walla Walls sweet onions, green peppers, etc. I eat it microwaved, even cold sometimes taking it for lunch when I am subbing.
If they are really huge I scrape the seeds out before grating or chopping them to put in the freezer. I freeze it in both 2 and 3 cup amounts in zip lock bags. Then I put those little bags in a big freezer bag to use during the winter. It is pretty watery but it you squeeze some of it our I've been happy with the results.

Wow, good morning all you early birds! Was everyone up all night? Seems that way!
I usually don't have any problem sleeping, so I guess I'm lucky in that aspect. Sometimes I wake up exhausted from all the weird and crazy dreams I have though. I have always been a heavy dreamer. Sometimes I have several a night!
I spent some time sewing yesterday morning, and then I spent the afternoon with my mom. She had some dental surgery done. I took her to the appt and then stayed with her awhile afterwards to make sure she would be okay. By the time I got home, I was starving, but I managed not to succumb to junk food, but fixed myself a healthy supper instead. Small victory, but I'll take it!
I need to finish up my new sundress this morning. I'm almost done with it. I like it except it sure is low cut! I'm talking bawdy house low cut! If I had any cleavage to speak of, I'd be knocking 'em dead for sure. Since I don't have the boobs, I'll just have to wear some big jewelry to "fill the gap", so to speak. LOL! Still I think this dress will be fine for an outdoor wedding in August. We're all going to broil, no matter what we wear. It's crazy.
I've been trying very hard to up my weight loss this week. I really, really, really want to be in Onederland by the time we go to Canada next month! Just 7 more pounds to go. I've dropped my caloric intake to 800 cals a day. I was eating around 1000 cals a day. But I'm still being careful to get all of my protein and supplements in every day.
Also, I would just very much like to weigh LESS than my husband when he comes home! That hasn't happened in about 10 years. How did I let this go on for so long?
I haven't read any of the posts I missed yesterday, but I think about you all every day. So many different life stories and so many new friends! Hugs, love and prayers to you all!
