OT: An Easter cookie

Okay, I know cookies are a big no-no!  But since I'm having my whole family here for the holiday weekend, I was trying to think of a dessert I could serve.  This is a cookie with PROTEIN and very few calories.  Super simple to make, too.  It's a meringue cookie.  I've tried store bought ones in the past, but didn't really care for them.  This one, however, is light and crisp and melts in your mouth when you bite it.  You can serve it plain, or crumble it in a dessert dish and add Cool Whip and berries for a parfait-like thing, which is what I plan to do on Easter.

Meringues:

1/4 tsp cream of tartar
4 large egg whites
1/4 c. Splenda for baking (the 1/2 sugar, 1/2 splenda kind)

Preheat oven to 250F.

Line baking sheets with parchment paper.

Beat cream of tartar and egg whites on high speed until foamy.  Gradually add the splenda, beating until stiff peaks form.  Drop spoonfuls of the egg white mixture onto the parchment paper.  (These cookies don't spread, so you can drop them fairly close together.)

Bake at 250F for 1 hour, rotating pans after 30 mins.  Turn oven off and let cookies cool in closed oven for 2 hours or longer (you can even leave them overnight).

Store in airtight container to maintain crisp texture.

We used to do those way back but with full sugar. Also used chocolate chips, maybe the sugar free chips would work. Food coloring for the holiday works as well.

vickie you are right cookies are a no-no however sometimes ya have to eat them!!! sometimes you have to give in or you will really overdo it when you finally cave!!!!
thanx for the great recipe to make life -"normal life" more simple and tasty!!!!!
