Mouthwatering Monday!

It is Monday again.......boy does that come around often! I am still wanting it to be the week end but what can I do? Just go with the days of the week I guess. Why fight a losing battle?

The topic for this week is Muffins. Do you have any special recipes that you like? Any that you changed for wls? Any that you got after surgery? You know the drill. One recipe per person. That way we can repeat the same topic again and get some more. Let's all get out our recipe boxes and check this topic out. Put you favorite one on and the next time you can put your 2nd favorite one on.

I will put mine on later on this afternoon. It is one that I got in junior high school Home Ec (heck they don't even call it Home Ec anymore do they?) and it was so good. It is Sweeter Muffins but I am thinking that it could be changed.

Good Morning Brenda......I don't have a recipe as I don't eat any kind of bread , muffins etc....I will look forward to seeing other peoples ideas. Maybe one day I will give them a try.

hey brenda here is mine to share...

APPLE MUFFINS

2 eggs

1/2 cup applesauce

1/4 cup olive oil

1/2 cup apple juice

3/4 teaspoon cinnamon

1/2 teaspoon salt

1/4 cup oat bran

1 3/4 cups whole grain flour

2 teaspoons baking soda

1 teaspoon cream of tartar

1/4 teaspoon nutmeg

1 cup chopped apples

beat liquid ingredients together. add dry ingredients. mix til just moistened. fold apples in. fill greased muffin tins 2/3 full.

bake 400*F for 20 minutes.

 THSES MUFFINS ARE SO WONDERFULLY MOIST,LIGHT AND LOADED WITH FRESH BANANA THAT YOU NEVER GUESS THAT THEY ARE SO LOW IN FAT AND HIGH IN FIBER.


 1 CUP MASHED BANANA ABOUT 2 MEDIUM
  1 CUP UNSWEETENED SHREDDED BRAN CEREAL LIKE ALL -BRAN
 1/4 CUP BUTTERMILK
2 LARGE EGG WHITES
2 TABLESPOONS CANOLA OIL
2 TEASPOONS MOLASSES
1 TEASPOON VANILLA
1 CUP ALL-PURPOSE FLOUR
1/4 CUP SPLENDA GRANULAR
1 TEASPOON BAKING SODA
1 TEASPOON BAKING POWDER
1/2 TEASPOON CREAM OF TARTER

PREHEAT OVEN TO 400F.SPRAY MUFFIN TIN WITH A NONSTICK BAKING SPRAY.IN A MUDIUM BOWL STIR TOGETHER THE FIRST 7 INGREDIENTS.SET ASIDE FOR AT LEAST 5 MINUTES TO SOFTEN BRAN.IN LARGE BOWL COMBINE FLOUR,SPLENDA,BAKING SODA,BAKING POWDER,AND CREAM OF TARTER.STIR MAKE A WELL AND ADD THE LIQUID MIXTURE,STIRRING JUST UNTIL BLENDED.SPOON INTO PREPARED MUFFINS CUPS.BAKE FOR 15 MINUTES OR UNTIL CENTER SPRINGS BACK WHEN LIGHTLY TOUCHED.COOL FOR 5 MINUTES BEFORE REMOVING TO A WIRE RACK.

Double Chocolate Protein Brownie Muffins

1Cup Splenda Baking Blend
1/2 Cup semi-sweet or sugar free chocolate chips
6 Tablespoons of margarine, softened
2 eggs
3/4 Cup Flour ( I used soy flour it has more protein)
1/2 tsp. baking soda
6 Tablespoons Unsweetened Cocoa Powder
1/2 Cup unsweetened Applesauce
1 tsp. vanilla extract
1 tsp. Sugar Free DaVince Vanilla syrup
1 scoop Vanilla or Chocolate Protein Powder
1/3 Cup Chopped Nuts (Pecans & Walnuts)
Preheat oven to 350. Spray 12 cup muffin tin with non stick spray
In medium bowl, combine flour, splenda, cocoa powder, protein powder, baking soda. Stir till well blended.
In another bowl, combine margarine, applesauce, eggs, vanilla ext. & vanilla SF syrup. Stir into flour mixture. Blend well. Add Chocolate Chips and chopped nuts. Mix well.
Then put batter in prepared muffin cups.
Cook for 15 to 20 mins. ( Everyones oven cooks differently)
Can use toothpick to check to see if they are done in the middle at 15 mins.
Cool for at least 5 mins. before moving to wire rack.
You can also bake this in a 8x8 glass dish and cut into squares.

Hope you enjoy these. My whole family loves them. Even the Non- WLS folks.

teresa-these sound yummo! question tho--the splenda baking blend -isn't it a bit higher in "sugar"?? what would happen if i used "regular" splenda??? i do dump on sugar and so much miss things like this....

I get up every morning determined to both change the world and have one hell of a good time. Sometimes this makes planning my day difficult.

Margo, You can use the regular splenda but they may not be as sweet. But you could add a little more of the regular splenda to suit your taste. They are truely good. I've made these for get togethers and they always get eaten up, so no left overs to take home. Also you could use all-purpose flour instead of soy flour too. I hope this helps.
