Scallops anyone?

COOL WHIP JELLO SALAD

1 lg. (9 oz.) S/F Cool Whip
1 sm. box orange S/F Jello
1 can mandarin oranges, drained and cut up
1 lg. cottage cheese (fat free)
1 can crushed pineapple, drained - optional

Mix and refridgerate at least 3 hrs. Enjoy

This can be made with strawberry jello and strawberries!

I am soooo making that recipe, I love scallops. Today I have decided to post a dessert. I made this and it is very good - enjoy!


Layered Strawberry Dessert

1 block of cream cheese (3oz.) softened

1 container sugar free cool whip

1 small instant sf cheesecake pudding

1 small sugar free strawberry jello

1 1/2 cups skim milk

1 or 2 pints fresh strawberries - sliced



Mix cream cheese, cool whip, pudding, jello and milk in a mixing bowl on low until well bended.



Layer in clear parfait glasses with the sliced strawberries.



Cover with plastic wrap and keep in fridge. This is even better the next day!

If you like just before serving top with s/f cool whip and a strawberry.

Not sure about recipes for your neices but will look and see what I can find online Talk with ya soon!

Michelle,  I made this last night....I am a huge fan of fresh strawberries ....Its way good...I left out the cream cheese though...

I have a recipe!!!  You don't understand...I don't have many.  And even those that I have, it takes a big kick in the head for me to remember it.  Not necessarily nutritious, but it goes over very well at potlucks with the normal humans.  They never guess it's SF. Sugar Free Pistachio Fluff 16 oz sugar free coolwhip 2 pkg (3 oz each) Sugar Free pistachio pudding 1 20 oz can crushed pineapple, including juice Mix together and chill.

Rachel Ray's .... Turkey Mini-Burgers with Warm Potato Salad..  I'm sure many of you have heard of Rachel Ray from the food network. She's a local celebrity of ours as she grew up here in Upstate NY... I just love her recipes because many of them are lower calorie... Here's one I found yesterday when I was searching for something to make with ground turkey. I would leave off the roll... 
2 pounds red-skinned potatoes, unpeeled
Salt
20 ounces ground turkey
1/3 cup plain bread crumbs
1 large egg
1 1/2 tablespoons chopped fresh sage
1/4 cup plus 1 tablespoon extra-virgin olive oil
Four 1-ounce slices of cheddar cheese, quartered
1/4 cup white wine  vinegar
3 tablespoons  snipped chives  (optional)
Dijon mustard
8 small dinner rolls  or potato rolls,  split
1. Cut the potatoes into 1/2-inch cubes, place in a large pot and cover with an inch of water. Salt the water and bring to a boil over high heat. Continue boiling until the potatoes are tender, about 10 minutes. 2. In a medium mixing bowl, combine the ground turkey with the bread crumbs, egg, sage and 1/2 teaspoon of salt. Divide the mixture into eighths and form into 1/2-inch-thick patties. 3. Heat the 1 tablespoon of olive oil in a large grill pan over medium heat. When the oil is rippling hot, add the patties and cook, flipping once, until cooked through, about 4 minutes per side. Place 2 small cheese squares on each burger. 4. When the potatoes are cooked, drain them and immediately toss with the remaining 1/4 cup of olive oil, the vinegar, 1/2 teaspoon of salt and the chives. 5. Serve each burger on a roll spread with mustard. Serve 2 burgers on each plate with the potato salad.  (or in our case... serve 1 burger... LOL)

I made these turkey burgers ...........Or jerry did lol but I ate them....we did not have them with the potatoe salad though we made squash with ginger garlic sauce and jery had it over rice I just ate the burger and some squa**** was yummy!  Thanks for the idea......reg burgers can be kinda greasy and make my tummy sick...turkey burgers alone are usualy to dry and hurt...so this was a nice idea not to dry not greasy .
