Scallops anyone?

Hey hey hey its wednesday!!!  I forgot   what day it is...without jens post I get all confused which is never very difficult for me in the first place lol  Last week I made Jans chicken salad and OMG something so simple was so good....I gotta tell ya thats going on my  favorite foods list I made the chicken salad with store bought rotiseri chicken and then sliced ripe plum tomatoes sprinkled them with pepper and some feta cheese then topped each one with some of the chicken salad and OMG it was good!  even Hubby was happy to have that for dinner.. I love seafood mostly shellfish over fish fish.....but I must say recently I have had and enjoyed talapia thanks to lisa... I love scallops I found this recipe online and its delicious and good for ya and recommended for wls patients or atleast I found it a weight loss center website and it was good and I think healthy too... SUMMER SCALLOPS VEGGIE SUPREME Serving Size 4-6: calories 109; fat 3gr ; protein 14g; carbohydrate 8gr Ingredients: 1 pound bay scallops 1 teaspoon olive oil 1 teaspoon salt and pepper 1/2 teaspoon cracked black pepper 1 medium red onion, sliced 1/2 thick 1 medium tomato, cut into 2 pieces 1/2 cup black olives, cut in half 1 medium zucchini, cut into 2 pieces 1/2 cup black olives, cut in half 1 medium zucchini, cut into 2 pieces 1/2 teaspoon celery seed  1/4 cup fresh lemon juice Directions: In a large saut© pan, heat olive oil on medium-high heat Next, add scallops, salt and pepper. Saut© for three minutes. The scallops will begin to brown. (Cooking time will vary depending on the size of the scallops. Shrimp can also be used.) Add the onion, tomato, zucchini and black olives. Saut****il onions become clear. Once onions are tender, add celery seed and lemon juice. Saut© for another three minutes. Serve. *CHEF'S NOTE: This dish is also fantastic when topped with shredded, smoked gouda cheese and chopped scallions. (Recipe courtesy of Chef Dave Fouts- www.chefdave.org OK Ladies and lurkers its your turn I need a few fresh ideas my nieces will be here next tuesday ...one is 8 and the other is 17 and both are a culinary challenge lol.......   My 8 year old niece eats only meat and my 17 year old niece is a vegan so she eats no meat or dairy or eggs.... its a real pain in the rump lol good thing I love them kids! they will be here for the whole summer and most likely start school with me.. wish me luck lol  Estelle

Glad you liked it Estelle, I've made it a couple times this week. You're right it's so simple! Not sure if I posted this one yet, but we talked about it so much at support group last night it's on my mind! Mock Rice Pudding ~~~~~~~~~~~~~~~ 1 package SF instant vanilla pudding (made according to directions) 1 12 oz container FF cottage cheese 2 small containers raisins cinnamon and nutmeg to taste Mix pudding according to directions on package, add spices. As it begins to set stir in cottage cheese and raisins. Let set overnight if possible. Raisins plump and flavors all blend. So Yummy! I've tried this with other flavors of pudding too - butterscotch, cheesecake and chocolate are good.

hmmmmm...This is very different.....I'm going to try it for sure because ....Jerry Loves raisins but hates cottage cheese...what do ya think?    I'll give it a shot!  Thanks I love your recipes!  Estelle

I've made this and not told anyone about the cottage cheese, my In-Laws swear they hate cottage cheese, but they love rice pudding, all they knew was it was good and healthier!

The scallops sound delicious - I also love seafood, especially shrimp, scallops and crab legs.  Yum, yum, yum!!!   I've been eating a lot of chicken wraps lately, using the low-carb Lawash wraps (70 calories, 7 g. protein).  I use romaine, add whatever veggies we have around (cucumbers, carrot shreds, shredded cabbage, sliced mushrooms, etc.), 3-5 oz. grilled chicken (or canned chicken), a couple tablespoons of crunchy rice noodles (skinny chow mein noodles), and 1/4 c. Kraft Light Catalina dressing.  I toss all the salad fixings in a bowl with the dressing, put it in the Lawash wrap, roll it up and enjoy!  It's great when I'm in a hurry, and you can use whatever veggies you have on hand.  The Lawash wraps are a good alternative to flour tortillas (a similar sized flour tortilla has about 210 calories, compared to the 70 calories for the Lawash wrap).  I buy the wheat flavor, but they do have other options as well.   Kellie

What is a Lawash wrap?  And where do you buy them?   The rest of it sounds yummy!

They are similar to a tortilla wrap and I just found them at my regular grocery store by the pita bread.  I also occasionally find them at one of the local discount stores, but they don't always have them in stock.  It's sometimes also spelled Lavash, which I think is the more common spelling.  I can't remember the name of the brand I buy, but I'll try to remember to look and update this post later.   I've also found some good-sounding recipes that making a grilled sandwich using these wraps.  They sound similar to a quesadilla or a panini, depending on what you put inside the wrap.  The panini-type recipes can be made in a George Foreman grill, or on a panini press.  I found one recipe that used turkey, smoked gouda cheese, fresh spinach, that was grilled like a panini then serve with a low-fat pesto mayo.  Sounds delish and I'm going to try it soon!   Kellie

The low carb wraps are absolutely yummy and make low carb eating way more bearable.....I have never heard of Lawash wraps though...the ones I buy are 90 calories each....is Lawash a brand name?  have you ever made a pizza on them?   one of the pizza places in town makes a personal pizza on a 10 in low carb wrap and its delicious......the crust gets kinda crispy and it has all the pizza house toppings its just better than it would be at home lol  but I have made them at home....just spray the bottom of the pan with a little pam or the like... Edit: Guess I shoulda read down the post more before I posted this lol thanks for the explaination lol

I am so not a recipie person...I just make stuff up as I go, but I did make your potato salad last week and Jen's jalapeno poppers.  They were so good.  I've got about 6 ripe jalapenos on my bush now and am curious to see how hot they are.  I do like the thread though...thanks for starting it.
