Coating for chicken that is lower carb/lower calorie?

Tried it tonight with a coconut flour breading- followed a copycat recipe for Kfc, but swapped the flour for coconut. It was Ok- but I don't think I will make another batch of the coating. I brined the chicken in a sal****er brine, dipped in buttermilk (lowfat), dredged once in the coconut flour. Cooked some in my Philips airfryer, and some in the Nuwave oven. The airfryer was crisper, but still had that floury taste. Nuwave was less crispy. Not overly impressed in general, and the polenta version I make is far crisper. But, the stats were much better- I used 3/4 cup of the recipe to coat 12 drumsticks. 2 drumsticks clocked in at 270 cals, 9 carb, 27 g protein, 5 fiber, 12 fat. I did not enter the spices into MFP to determine the stats, nor included the spray of Pam used. The chicken I referenced in MFP indicated it was 4 ounces of the "edible" part of a drumstick. Just sharing in case someone is interested.

I would coat in fresh parmesan reggiano and fresh thyme!

Kay's naturals has a pretzel breading they sell--- which of course is just their crushed pretzels. It at least has some protein in it.

I found a recipe for "parmesan-crusted chicken"  which is quite good fresh.  it doesn't store well, as it gets soggy.  You can probably find recipes online, but if you want, I can post mine.
