Coating for chicken that is lower carb/lower calorie?

Looking forward to trying it Tonight's menu is a Vietnimese dish- carmel stewed pork in the pressure cooker. Next up will be chicken.

I prefer coconut flour, almond flour, or pork rinds. You can dunk the chicken in egg or egg white (whites would prob save some calories, but eh).

I generally do almond meal or almond flour (almond meal = ground almonds, skin on. almond flour = ground almonds, blanched) and parmesan mix and then I season it like a regular flour salt, pepper, garlic powder, onion, powder, etc. I use this for fish and chicken.

Then either pan saute (crunchier) or bake/broil.

That being said... it's rare these days... I tend to do just seasoning and have been living off these foil packets because of the hot summer temps and not wanting to heat up the chicken. Sunday I made fajitas in foil...

Thanks for the post. I have tried breading fish in almond flour before, and didn't like it too well.  It was Ok, but not worth the calories. I do like making it with polenta- super cruncy and tasty, but also high calorie.

Kinda weird, but I have used Textured Vegetable Protein (TVP) as a breading.  This adds more protein (bonus) and was pretty tasty.  Some parm in it was tastier.  Also it helps to coat the chicken with a binder.

Oh, I think I want to try this. Do you grind it up a bit to make it closer to a flour or leave it as is? I always have this on hand. Made it today with coconut flour, but not quite crispy enough for my tastes.

I left it as is.  Extra Crispy :)  I've also mixed it with Parm and even thrown some flax seeds in for extra fiber/texture.  The Parm helps with the crispyness...and I spray it with non-stick spray on top which also helps crisp it up since I always bake.

This will be my next attempt. I have a Philips air fryer, and that puppy makes some crispy goodness that makes you think it was deep fried I really think the tvp is going to work for me- I don't like breading that is not truly crispy on chicken, and the other options are either too high calorie (polenta) and crispy, or a little better stats but floury and not so crispy. Looking forward to the tvp option.
