So here's my 'winging' it recipe... along with a few tips...

I buy the riced cauliflower (fresh) from Sprouts. I've not tried the frozen variety.

For a family of 4, with enough leftovers to feed me a few times for lunch, and at least enough for a lunch for the hubs...

I marinate chicken (or beef) in a teriyaki/soy/rice wine vinegar/red pepper marinate for as long as a day. I cut it into real bite sized pieces prior to cooking. This time I used 5 boneless chicken thighs

1 bag of riced cauliflower (you can use two if you want, but I like it meat heavy for better protein)

6 eggs (we like it egg heavy LOL) with a splash of milk, scrambled well

3/4 bag of peas/carrots all ready mixed (here's the worst of it carb-wise, but for us, it's a necessity LOL!)

teriyaki sauce/ soy sauce/ red pepper flakes/ ginger (enough to marinate, then another smaller batch for the cauliflower)

Cook up chicken in wok first, then put aside.

Mix some of the sauce in with the raw cauliflower to coat it. (maybe 1/3 of a cup? I'm guessing here)

Heat up wok REALLY hot... I use a mixture of sesame/olive oil to stir fry - I like the added flavor of the sesame, but just sesame is too strong for us.

Throw in cauliflower and toss to coat in the oil, I let it sit for maybe 2 minutes between tossing again, but you don't want to cook this too long so it doesn't get mushy, so the hotter the better!

Throw in chicken and frozen peas/carrots and push to the side. (the peas/carrots defrost and stay pretty firm this way, which we like)

Throw in eggs and scramble them by themselves (if you mix the raw egg directly into the riced cauliflower, it doesn't work as well).

Stir cooked eggs into rice mixture, and serve!

That's it! It's pretty easy truth be told!

Good Morning! So glad you had a good weekend. We had a pretty uneventful Saturday and then yesterday morning was spent trying to help two lost doggies. We eventually got them back to their owners and all is good.

QOTD: Hubby usually handles the grocery shopping at Wal-Mart bright and early Saturday morning. There is a more expensive grocery store just down the street so we usually end up stopping in there on the way home from work during the week to pick up some odds and ends of stuff we need, forgot or ran out of. We use an app called ourgroceries to keep track of our needs-all three of us can add things to one list. We use coupons when they are available.

Time since surgery: 2 years, 10 months

B: SF latte, eggbeaters with roasted red pepper, ½ an orange and 2 turkey sausage links

L: Albacore tuna lettuce wraps and baby carrots

S: SF latte, homemade Greek yogurt, homemade low carb granola, 2 Brazil nuts and Buddig beef pack

D: Egg salad (1 boiled egg mixed with 1/4c low fat cottage cheese) inside ½ a low carb pita pocket, edamame and SF pistachio pudding made with Fairlife

E: 45 mins stationary stepper this morning and 40 mins of elliptical at lunch

V/W: On track

Totals: Cals:1154 Protein:128 Carbs:82 Fat:37

I haven't had it in forever and when I was looking for a recipe on Pinterst yesterday the egg salad with cottage cheese popped up on my feed and I have boiled eggs and cottage cheese in the fridge-Score!!

I love egg salad with cottage cheese! I also love tuna with cottage cheese. I have eaten this since I was a kid but for whatever reason have not had it since surgery. It also cuts way down on the amount of mayo.

Good morning Daisy and menu champs. Congrats to all of you that did so well on AMAW/CAMAW. You guys were rock stars!

My weekend was super quiet, and I spent most of it in bed, binge watching Orange is the New Black. Finished that, and am now on House of Cards. My friend came down from Seattle to help out, and she was great. I am so glad she was here, plus we had a good visit.

I am feeling pretty good today, and think the pain pills may be behind me, so that is great.

QOTD:I do most of my grocery shopping at Trader Joe's, QFC (a Kroger store) and Whole Foods. I also like to get my produce in the summer at the neighborhood farmer's market. I get most of my meat and fish at Whole Foods because I know where it comes from and that there are no nitrates in any of their regular meat or deli. Plus, they will cut or grind it however I want. More expensive, yes, but I am just feeding myself, so not too bad.

i don't use coupons. I used to, but got out of the habit. I use a list for things I am out of, or need for a specific recipe, but it is just a starting place.

2-1/2 years post-op:

B: egg beaters, mozzarella and bacon omelette, cherries

S: jerky, protein water

L: prawns

S: jalapeño chicken sausage link

D: chicken leg

S: Light & Fit yogurt

totals: calories 879, carbs 34, protein 120
