And I cooked it!  Wow...will wonders never cease?  Just had to share - this was one of my favorite foods since surgery.

Okay, I'm a genius.  Sorry!  Anyway, you take 3 - 4 boneless skinless chicken breasts, salt and pepper them and coat them in flour (I used a whole wheat / soy flour mixture).  Brown them on both sides using a tiny bit of olive oil.  Once they are brown, take 1 cup of chicken broth and bring it to a boil in the same skillet you used for the chicken.  Once it's boiling, add 1 cup of mushrooms and 1 cup of onions.  Cook that for 6-8 minutes until the onions are tender (some of the broth will evaporate).  Add in 1/4 cup of fresh squeezed lemon juice a dash of parsley (which I left out - yuck!!!) and 1/4 cup of capers.  Add your chicken and let it simmer for another 5 minutes or so.  Remove the chicken, garnish with the onions, mushrooms and if you want, lemon slices.  YUMMERS!

I LOVE chicken piccatta and I am making this recipe along with Janice's cabbage recipe next week!  This sounds delish!  I used to get chicken piccatta at primos all the time.

This sounds awesome.  I made my cabbage and hamburger stew last night and it was AMAZING.  If anyone wants the recipe for it let me know.
