Need Ideas

I know I posted this last night but can;t find it! -- My girls are adopted -- one from Romania and one from Guatemala. On Saturday we are going to a gathering for adoptive families (mostly from Guatemala). I need to bring a side dish and I am wanting to bring something that I can eat too. I was thinking Charlottes refried beans but can't find the recipe. Any other ideas?

Nancy, go to www.theworldaccordingtoeggface.blogspot.com She has alot of good recipes. My favorites are the different kinds of Bites that she makes. Just type in bites under her search and they should all come up. Have fun

Hi, Nancy!

Easy FIesta Refried Beans

1 can ff Refried Beans (Great Value from Wal-Mart are cheap and work great)
1 can Ranch Style or regular pinto beans drained
1/2 c Salsa (I use Pace Picante usually)
1/c shredded cheese any flavor

Mix all together in pot on stove top until smooth. Pour into pan and top with more cheese. Bake at 350 for 10 mins or until cheese is melted. For a 9x13 pan, double the recipe.

I posted this awhile back, but at the rate of postings here, it falls back very quickly!

Thanks so much! I was trying to go back but gave up. I thought this would work since it is mainly a Guatemala get together -- although Guatemala's refried black beans are to die for!!!!! They don't make them here like they do in Guatemala though.
