Baked Okra recipe I'm trying today

I searched online and found loads of healthy okra recipes. I'm going to try THIS RECIPE today. ; ) I may try substituting something else for the corn meal.... like maybe wheat germ.

I love okra!  That sounds soooooooooo good!  I am going to make that myself sometime this week~ let me know how it turns out!

I fixed okra like this all the time on weigh****chers.  Only, I cooked it in a skillet and not in the oven.  You can vary the amount of corn meal as you like.  You just want to get a crunchy outside on the okra.  I never used more than a few tablespoons but I never fixed 4 pounds of okra either!

The okra is in the oven!

It was easy to prepare (well, if you don't mind cleaning and cutting okra...makes my hands burn) and I'm preparing 4 cups of okra. It's 600 calories for the entire 4 cups ... that's 150 calories per cup. I don't think there's any way I could eat even 1/2 of a cup ( = 75 calories).

So, I'm hoping this will be golden brown, a little crunchy, and a good veggie side dish or a healthy snack. We're supposed to do 2 healthy snacks  per day per OWLO rules ... so, I'm not cheating. ; ) We're supposed to use healthy snacks between meals to prevent getting too hungry & overeating at meals and keep our metabolism fueled. (I usually snack on almonds or cheese with whole wheat crackers or meat, but since I've already had my Chike today ... veggie snack is *good*.)
 

I'll report back after dinner.

I bet panko would be a good topping for it-and it gets crunchy too.

I need to try this too. Now, if I could find a healthy way to have cheddar stuffed jalapeno peppers, I'd be set.

Why couldn't you fix the cheddar stuffed peppers the same way?  I have a bookmarked recipe for anaheim peppers I will try to PM to you.

Shelly - how was the okra?  I'm catching up on the old posts and saw this one.  I love okra!  How was it?

And I bought some panko yesterday-no okra, but gonna put it on some squash.  It's whole wheat panko-I'll get back to you guys after lunch.
