What's thanksgiving without pumpkin?
I have always loved pumpkin pie and last year I was just a few months out from my surgery and really wanted to find a way to enjoy my beloved pumpkin without undoing the work in progress. I found this recipe and shared with some friends at a WLS support group pot luck and it was a big hit.
If you are craving pumpkin, give this a try.

I also tried adding a scoop of vanilla protien powder to the recipe. Of course, it slightly alters the flavor and texture, but if you want to boost the protien value, it's a good way to do 'have your pie and eat it too!'
I hope you enjoy,

We'll be using organic veggie broth and unsweetened soy milk in this recipe. I've been really looking forward to trying this recipe so Thanksgiving it is. I'm going to be *thankful* that my plan says lowfat cream soups and lowfat , sugar-free pudding by then!
