Mexican anyone????
Here is a great recipe for shredded chicken that can be used in any mexican dish. I found it the other day and made it and oh my goodness!!!!!!! The recipe says that it freezes well.... A good thing considering I'm single and could never eat the whole pan. If you like mexican and fix it at home, this will kick plain shredded chicken in the hooha!!!! Hope you enjoy.

Shredded Chicken for Enchiladas, Tostados, Tacos, etc. (2 parts)
4 boneless breast halves (or you may use a whole chicken)
1/2 med onion, sliced
2 garlic cloves, smashed
1 Tbsp salt
Water
Place ingredients in a pot and add just enough water to cover the chicken.
Bring to a slow boil, cover, lower heat to maintain a simmer and coo****il done - about 20/25 minutes. If using a whole chicken, about 50/60 minutes. Remove chicken, let cool and shred. Reserve broth. (I like flavor so I actually seasoned my chicken before putting it in the pot with these ingredients. I also used a whole chicken)
2 Tbsp butter
1 Garlic clove, minced
1/2 med onion, chopped
1 med tomato, seeded & chopped
1/2 bell pepper, chopped
1 tsp course ground black pepper
1 tsp marjoram
1/4 C cilantro, chopped (or to taste) I don't llike cilantro so I didn't use it
1 1/2 tsp ground cumin
2 Tbsp tomato sauce
1 1/2 tsp salt (to taste)
1/2 C of the reserved chicken broth
In a large pan, melt butter over low heat. Add all the ingredients from butter to cumin . Saute until soft, about 10 minutes. Stir in shredded chicken and briefly saute. Add tomato sauce & chicken broth. Add salt to taste. Mix well and you're done!!!!
If a whole chicken is used, adjust your ingredients. Example I used a whole chicken so i used the whole bell pepper and after putting in the amout of spices listed above, I made additions where needed, ex- more cumin, more garlic, etc. I also used and entire small can of tomato sauce to ensure moisture. This stuff was fantastic!! My sister is a picky eater and she is ready to get a few chickens so she can make up an freeze portions so her girls can just pull out a baggie and have mexican!

So how are you doing? You *sound* fabulous! And I see your ticker says you are already down 44 pounds?! Wowza, woman...you ARE doing fabulous! I'm so glad things have gone well for you. Think of me the next time you have Mexican...I'll be joining you on the bench with my fork before you know it!

My 44lbs down is based on a weight before my regime....i just updated my ticker to reflect my just before surgery weight and current weight loss, so since surgery is 20lbs, but from my highest which was in July of this year, its 50!!! Unfortunately when you're my size, it's hard to see the difference! But I'm still excited!
It's so hard to know what to start our ticker at, isn't it?! Right now I have mine set for what I weighed when I started my pre-op diet yesterday, which is actually weigh 47 pounds less than my all-time high. I've been this weight for the past couple of years though, so I will start here. :)
You have done so great with your weight-loss! I know what you mean about what it takes to see a difference. It takes me getting more toward the mid-200's before I start *really* noticing. How I hope to see that within the next month or so!
Stay excited...you deserve this gift you've given yourself...milk it for all it's worth! And I have to tell you...I LOVE your zest for life...it's contagious! :)

I know you're excited!!! Don't get discouraged!! You're doing great! I understand where you're coming from though, my high was 425lbs (395 day of WLS) and it was a couple months before people really started noticing, but just wait... You'll be dropping it like crazy!!!!!!! Anyway, just wanted to put my 2 cents in, keep up the wonderful work!!!!
