Guiltless French Onion Dip
At a support group meeting today I 'verbally' shared a recipe for a guiltless french onion dip and was asked to post it. I hope that you will all enjoy!

Caramelized French Onion Dip
This low calorie, high protein dip is a wonderful way to serve a chip and dip that you can enjoy without guilt and remorse later. While great with conventional potato chips, it's wonderful served with carrot 'chips' and freshly blanched broccoli.
1 Tbs extra-virgin olive oil, a turn of the pan
1 Tbs butter
2 medium onions, quartered lengthwise then very thinly sliced
1 cube beef bouillon
1/2 cup water
2 Tbs Splenda, brown 'sugar'
Black pepper
2 tsp Worcestershire sauce, eyeball it
1 cups non-fat sour cream
1 cup non-fat greek yogurt
pinch salt, optional
2 Tbs chopped chives, 5 to 6 blades
1. Place a medium skillet over medium to medium high heat and add the extra-virgin olive oil and the butter. Melt butter into oil then add onions and Worcestershire sauce. Cook mixture for 10 to 15 minutes, stirring occasionally. Add bouillon cube to the pan with 1/2 cup water, Splenda "Brown Sugar" and coo****il it "melts" coating the onions. Keep stirring frequently for at least 20 minutes. Add more water as necessary to prevent scorching. Watch the onions carefully, you want them to develop a wonderful mahogany color. Season the onions with pepper . Remove from heat and transfer to a mixing bowl to cool.
2. Mix the sour cream and greek yogurt in a medium mixing bowl. Stir in the onions and mix well. Add salt to taste. Serve chilled. Garnish with chives.
