Rueben Dip For A Crockpot

  • 4 4-ounce packages corned beef
  • 2 cups sauerkraut, drained
  • 1 16-ounce package shredded Swiss cheese
  • 1 small bottle 1000 Island salad dressing (LF or FF)

Place all ingredients in the crockpot in the order in which they are listed. Heat on high for 1 hour, stirring occasionally to blend, until everything is hot and the cheese is completely melted. Serve with WASA Fiber Rye crackers or Real! Rye or Pumpernickel Crackers for the low carbers and slices of ****tail rye bread for the non-low carbers.

 

Hot Cream Cheese and Crab Dip Serving: 10 Prep Time: 15 minutes Cook Time: 8 minutes Total Time: 23 minutes

1-8 oz package light cream cheese  1-8 oz container light sour cream  (chunk style is best) can crabmeat or fresh 1 chopped green onion  grated Cheddar cheese  for dipping tortilla chips, pork rinds or celery stix In a medium mixing bowl, combine cream cheese, sour cream, crab meat, and green onion.  Smooth mixture into a small baking pan. Sprinkle with grated cheddar. Bake at 400 F for about 20 minutes.  Remove from oven and serve!

Options for Chips and Dippers  

  • Take one American cheese slice, place or parchment paper or heavy duty freezer wrap in microwave, and microwave for 1 minute 10 seconds, until crispy.
  • Take very thinly sliced cooked salami, place between paper towels and microwave until crispy! Almost like a potato chip without the potato
  • Sliced fresh vegetables make good dippers. Try spears of broccoli, slices of mushroom, cucumber or zucchini, spoons of sweet red and green pepper.
  • Hollow out cherry tomatoes and fill with any spread or dip.
  • Any sliced deli meat can be covered with a spread or dip and rolled-up for great finger food.
  • Use lettuce leaves for wraps

I bake pepperoni on about 250 for about 30 min or so, then drain and use for dipping.  Taste great. Ramona

Ramona, I make pepperoni "chips" in the microwave in a couple of minutes. Put a paper towel on paper plate, or plate.  Cover with single layer of pepperoni slices.  Cover with paper towel (to catch "spatters).

Cook on HIGH for 2 minutes.  Take out and let cool... Voila, pepperoni chips!
