Hearty White Chicken Chili Recipe
I found this recipe in our paper. I had to try it and it was great. It's similar to the Chicken Chili at Ruby Tuesday which is yummy!
2 cups chicken breasts (I used chicken tenders)
1 can Great Northern Beans
2 cups chicken broth
1 cup green chili salsa
1/4 cup fresh cilantro, chopped
1 large fresh tomatoe, chopped
1/3 cup fresh green onion ( I used a regular sweet onion)
1 fresh jalapeno pepper, chopped
1/4 tsp fresh lemon peel
2 Tbsp fresh lime juice
1/2 cup sour cream, reduced fat
Cut cooked chicken into small, bite sized pieces.
Drain beans and rinse in cool water.
Wash all vegetables and chop coarsely. Wash and chop cilantro; grate lemon peel.
Combine all ingredients, except chicken and sour cream, in a cooking pot. Bring to a boil.
Cover with a lid, reduce heat and simmer about 30 minutes. Add chicken and heat to serving temp. Serve chili topped with a heaping teaspoon of reduced fat sour cream.
Nutrition info for 1 cup serving:
230 calories, 22 gm protein, 28 gm carb, 4 gm fat, 1.5 gm sat fat, 35 mg cholesterol, 500 mg sodium, 8 gm fiber.
