Chicken Stew Recipe
I tried this over the weekend and it was delicious.
4-6 Boneless chicken thighs stewed in water with a little salt.
1 med onion very finely diced
2 stalks of celery very finely diced
1 large carrot sliced thinly
1/2 tsp of garlic powder
1/4 tsp black pepper
1/4 tsp salt
t tbs. olive oil
1 tbs flour
1 can of Campbells Chicken Broth Concentrate
1 can of butter beans drained.
1 can of diced petite tomatoes undrained
1 4 oz can of mixed vegetables
Stew chicken thighs just covered in water with a little salt for about 30 minutes. Save the liquid from the chicken. Chop into small bite size pieces.
Place 1 tbs olive oil in large pot and cook onion, celery and carrots just until tender. Add 1 tbs of flour sprinkled over everything and stir for about 2 minutes. Don't let flour get too brown. Add salt, pepper, garlic powder while slowly adding about 3 cups of chicken broth from stewing the
chicken plus the canned broth. Add beans, tomatoes and mixed vegetables. Bring to a boil and reduce heat to simmer for about 15 minutes. This is good just like it is but may also be pureed in small batches in the blender. Enjoy.
