ROTD-BLT Soup! Yummmmmmmmm

Fast and EZ
BLT SOUP
Coarsely crumble bacon & set aside. In 2-quart saucepan, stir together tomatoes, broth, beans and seasoning. Bring to a simmer; stir in vinegar. In small bowl, toss together lettuce & basil. Ladle soup into large soup plates or bowls; garnish each serving with crumbled bacon and lettuce & basil.
Serves 4.

If you want a "side" with this, take a Low Carb tortilla, cover half with mozzarella and fold over. Heat in toaster oven for "crispy" or warm in saute pan to melt cheese for "soft." The cheese will add protein to this tasty meal.
NOTE: I keep some of the pre-cooked bacon on hand, but it's not cooked enough for me... I like crispy bacon. So I put it between paper towels and Zap in micro for 1 1/2 mins. That makes this even faster to make.
I like onion on my BLT (guess that makes it a BLOT!) but my tummy doesn't like raw onions anymore, so I can saute a little diced onion in a cup in the microwave real fast to stir into this soup.
Kick this up a notch by using fire roasted chopped tomatoes instead of just "plain."
Topping: I LOVE Duke's mayo (a vice I didn't/won't give up)... and what's a BLT w/out a little mayo, so I stir a little Duke's mayo in with some FF sour cream and put a dollop of that on top.

My NUT in G'ville said they had a lady one time that kept dumping and couldn't figure out why. So they had her keep a very detailed food journal and came to find out she was adding in a T or so of Miracle Whip to her tuna salad (which has sugar in it).... and that little bit of sugar in there was the culprit, so she suggested she switch to Duke's that has no sugar, and the problem was solved!
