Hey Peeps....Im looking for SOFT  or chewy type of sugar cookie recipe....Want to decorate cookies with the Princess for us to give away with the other stuff we make for Christmas.... Hi Tammy~ammy...

I found this recipe in a box of recipes I got at yard sale....they are soft and good but they are drop cookies and NOT wls friendly.  I've never tried to shape them.  Might be worth experimenting.

2 eggs
3/4 c sugar
2/3 c oil
2 tsp vanilla
2 c flour
2 tsp baking powder
1/2 tsp salt

Mix eggs, sugar, oil and vanilla.  Stir in remaining. Drop on sheet and bake at 350 for 10 minutes.

These are wonderful...then again I haven't had them in over 3 years!!

Thanks Peggy!!!.... So do you think the texture is stiff enough to be able to cut these... If not do you know what I might do to stiffen it up a bit without changing the taste?...Not super in important that we cut them but I think she would enjoy doing it... Don't you love being "adopted"?  I can't wait for grandkids so I can spoil them and their friends rotten!!

You could try refrigerating the dough to see if would stiffen up enough to shape.  I'm pretty sure the oil is what makes them soft so maybe a little less oil?  I don't really know what else to try, sorry.  But they are really good if you make them as is.  Have fun!

Try any of the Amish Sugar cookie recipes.  Just chill the dough and cut out the cookies.  I am going to experiment with splenda with one of the recipes.
