1 whole chicken 21/2 to 3 pounds
3 carrots cut in half
3 celery stalks
1 large onion
2 tsp. kosher salt
1/2 tsp whole peppercorns
Place all ingredients in a 8 to 10 quart stock pot and fill with water. Bring to a boil, reduce heat and simmer, skimming away foam as necessary, for 31/2 to 4 hours, until reduced by 1/3. Carefully transfer the chicken to a bowl and pour the stock through a fine sieve, set over a large bowl or pot, pressing on the solids to extract all the liquid. Cool stock at room temperature. cover and chill, skim fat. 40 calories, 1.5 S fat 4.o carbs. 3.0 protein
reserve and maybe freeze chicken till you get to that stage or share with your family.
Hope this helps!!

Hi, Cor:
Sorry, I was just getting ready to reply to your post and send you the recipe and I see Jeanine beat me to it.
Thanks Jeanine, I thought I was going to have to retype it. I really need to save that one in my recipe folder.
Cor, you will LOVE the broth especially after surgery. You can skin and debone then freeze the chicken so you can eat it when it's allowed. Won't be long now and you'll be an official "LOSER!"
