PUMPKIN ROLL

3 eggs

2/3 cup of pumpkin

1 cup sugar or splenda

3/4 cup flour

1 tsp salt

1 tsp soda

1 1/2 tsp cinnimmon

1 cup chopped pecans

combine all except nuts  after mixing spread onto a spayed cookie sheet bake at 375 for 10 to 15 minutes. cool 10 minutes turn out onto wax paper that has been sprinkled well with powdered sugar, roll with the wax paper like you are making the wax paper part of the cake it will be inside between rolls. then wrap in plastic wrap and put in ref. one hour or longer.

FILLING:::::

8oz of soft cream cheese  2 TBSP Butter, 1tsp vanilla  mix together and spread on opened cake , spread nuts and reroll without wax paper. roll in powdered sugar again and nuts and wrap in foil...can freeze and ships well ...

i usually double this and make two at a time. most times i make somewhere around ten of them for different people and our christmas...i did use splenda in them year before last and couldnt tell the difference....good stuff.
