Low carb sugar free crustless pumpkin pie.....DELISH!

Well I made this last night and my husband and I decided we should try it @ 11:30pm.  He says you know we should try that in case it isn't any good before we serve it to family.  YEAH right haha.  I modified a recipe that I had not sure of the stats but its all good. 

1 -15 oz can of pumpkin
1/2 c. egg beaters
1-8oz can of evaporated milk ( I got fat- free)
1c splenda
2 T sugar free maple syrup
Use pumpkin pie spice to taste, I like alot, maybe 2 Tablespoons, but however you like it
1/4 t. salt

preheat oven to 425*
mix all ingredience together with a mixer
pour into a pie pan that has been sprayed with cooking spray
Put pie in the oven and turn the temp down to 350* bake approx 1 hour.  Or until done.

I put some fat free redi whip on top.  This is so good!  My grandpa is diabetic and I'm going to take him one today.  Happy Thanksgiving! Lou (~.~)

that sounds really good I just love all the sugar free stuff well not all but most of it thats all I fixed this year they eat it or weep lol and geuss what they it eat and like it .


Enjoyed meeting you the other night you are so pretty lookforward seeing everyone again soon maybe .
