Good morning David,
Here is my favorite and now my DH's, and he hates veggies, but loves this.  I stated making this when I made my dh some egg rolls and had extra filling so I stir fried it for me, he now LOVES it.  here is how I make it.

1 bag Fresh bean sprouts
3 cups chopped cabbage
2 T soy sauce (Low SOdium)
3 shakes of ground ginger (can be spicy, add to your taste)
1 larg onion sliced
1 green pepper
1 sm can water sliced chestnuts (optional)
can keep if veggitarian or add, any left over chic, beef, pork, I even add,  Morning Star Veggie crumbles

mix all ingre in large bowl, use right away or keep for days, and fry up indevidual servings

Fry up in olive oil

I just baked scallops with brocolli.

Layer scallops
Layer brocolli
Mix 8 oz. sour cream with 1/2 c. shredded parm cheese
spread over scallops and brocolli
sprinkle a little parm cheese over top
bake at 350 for about 1/2 hour

OMG it's yummy!

I'm going to do just veggies next time. You can use non fat sour cream too.

My favorite is homemade beef jerky. I slice any kind of steak into thin strips, soak in any marinate overnight. Place in a dehydrator the next morning, rotate the trays before bed and when you wake up the next morning it's all done. I love it and 2 ounces is about 18 grams of protein!!Cheryl

I'm finding that for me, since I live alone casseroles, crockpot, and my freezer have become my best friends. (all low-carb, no noodles, potatoes etc recipes)

I love stuffed green peppers - although now due to portion size I just cut up the green peppers into large bites and put the stuffing on top of the chunks in a casserole.

I also use my grill a lot - I package up individual servings of chicken in marinade and freeze - pulling out a day before I plan to use it. Yummy.

This is a change....I for a great deal of my life have eaten most of my meals out - so learning to cook and plan ahead like this has taken some effort to do, but it's starting to be routine to me now.

My 2 most favorite foods now are:  turkey jerky and turkey burgers on the grill.  I eat both all the time.  Missi
