Sugar Free Egg Nog Recipe




 
 

So many sugar free egg nog recipes to choose from.  Compare the ingredients to what you have available, what your dietary needs are, and bask in the joy that is Egg Nog without fear of breaking your diet.

This first one is a South Beach diet phase 1 compliant version.

Ingredients

  • 4 cups fat-free milk
  • 1 cup egg substitute
  • Sugar substitute equal to 4 tablespoons of sugar
  • 1 tablespoon rum extract or 1 teaspoon pure vanilla extract
     

How to make Sugar Free Egg Nog

Combine milk, egg substitute, sugar substitute, and rum extract or vanilla extract. Beat with rotary beater or electric mixer until blended. Chill thoroughly. Stir before serving and sprinkle with nutmeg.

This recipe is a South Beach diet phase 2 and 3 compliant version.  This one tastes great. Pudding may sound strange, but believe the final product is awesome.

Prep Time: approx. 15 Minutes. Ready in about 12 Hours 15 Minutes. Makes 10 servings.
 

Recipe #2 Ingredients

  • 4 cups skim milk, divided
  • 1 (1 ounce) package instant sugar-free vanilla pudding mix
  • 1 cup egg substitute
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg

Directions

In a medium bowl combine 2 cups milk and pudding mixture; stir well until thickened.


To the pudding add remaining 2 cups milk and egg substitute; mix well. Stir in vanilla extract, salt and nutmeg until well blended and coats a spoon. Refrigerate overnight.
 

Here's another South Beach diet egg nog that's phase 2 and 3 compliant. 

Ingredients

  • 1 quart skim or 1% low-fat milk
  • 1 cup fat-free egg substitute
  • 6 packets Equal
  • 1 tablespoon sugar-free instant vanilla pudding mix
  • 2 to 3 teaspoons pure vanilla extract
  • 1/2 tsp. ground nutmeg
     

Directions

Place all ingredients in a blender. Blend for 30 to 60 seconds or until smooth. Chill for several hours. Shake or stir egg nog well to blend. Serve in mugs.

 

 

 

Here's a sugar-free and eggless egg nog, for those who need such a thing, but don't want to miss out on the christmas spirit.

Ingredients

 

  • 11 cups cold skim milk
  • 2 teaspoons vanilla extract
  • Two packages (1.5 ounces each) instant sugar-free vanilla pudding mix
  • Artificial sweetener equivalent to 1/3-cup sugar (such as 1/3 cup granular Splenda)
  • 1/2 teaspoon ground nutmeg

 

Directions

In a large bowl, combine the milk and vanilla.

In another bowl, combine dry pudding mix, sweetener and nutmeg.

Whisk into milk mixture until smooth.

Refrigerate until served.
 

Here's an actual South Beach Diet Eggnog meant for phases 2 and 3.

Ingredients

  • 1 1/2 cups egg substitute (such as Egg Beaters)
  • 2 tablespoons artificial sweetener (Nutrasweet, aspartame, Splenda, etc.)
  • 2 tablespoons vanilla
  • 2 (12 ounce) cans evaporated skim milk
  • 3 cups fat-free half-and-half
  • 1 tablespoon brandy extract
  • Nutmeg
     

How to make Sugar Free Egg Nog

Pour 1 1/2 cups egg substitute into bowl.

Add artificial sweetener and mix on medium speed until light and fluffy.

Gradually blend in vanilla, evaporated skim milk, fat-free half-and-half, and brandy extract.

Chill for 24 hours to blend the flavors.

To serve, stir well and sprinkle with nutmeg.

If we spend our time comparing our life/weight loss/body to others, we totally miss what WE have accomplished.   Keep in mind how far you have come and what you can do now that you couldn't do weeks/months/years ago.   I hate the expression " It's all good", but in this case it fits!   Wherever you are in your journey  ... It's ALL good!!!

Yes, everything went very smoothly. No complications. The usual pain in the big incision - a little less now. The pain meds gave me a headache, and I felt better once off those. I've had a ton of energy and feel way better than before the surgery.

The bad news (or maybe silver-lined): Skim milk is on our clear liquids list, and I may have overdone it today. I'm wondering if the surgery made me lactose intolerant. I got diarrhea and fart city. Either that, or its normal system recovery. But it started soon after I started the milk. SO I'll go off it tomorrow and see what happens. If I am lactose intolerant, I'll just have to drink soy nog instead!

Hi Clara,

My reaction to skim milk has been the same as yours.  Yogurt is similar but not as bad.  For the milk, I tried soy but prefer almond milk instead, even though it's lower in protein.  I've read again and again that something that might not agree with us now may agree with us down the line.  I hope this is true with milk and yogurt for me!

Skim milk has been the same for me since surgery also. I had to switch to light soy milk, and tolerating things just fine now.

Oh I have heard many people have that reaction after the band and RNY too. I think its pretty normal. LOL (((Hugs)))
                                   Im so glad your not in pain. I am like you I wont take those pain meds if I dont 100% NEED THEM because the side effects are NO FUN AT ALL! LOL
