Does anyone have a good recipe for chicken salad?  I've tried making it different ways and still nothing comes out good.  Any suggestions would be appreciated. Regina

I just chop up some chicken well. Add  Diced up egg, celery, a couple tbs of pickle relish and add some lite miracle whip untill it is the right texture. I use regular sweet relish but I've heard you can get SF but I've not seen it yet.  I only put in enough for a litlle flavor so I don't think it is too bad.  I do the same for tuna salad.  What is really good is to server either on sliced cucumbers!

Jan, I've seen the sugar free relish at Kroger.

Jan, I have found the S/F relish at Marsh also.  I really like it.

Regina, This is how I make mine.  I do not measure anything, I just judge depending on how many people I plan on feeding or how many melas I want out of it. Chicken  Breast skinless raisins celery grapes pineapples (crushed or chunk drained) Miacle Whip Light I like making it this way, it is low in fat and is a good protein source, but I also get my fruit servings in at the same time.   I made a bowl last week and brought it into work and needless to say it was all go.  I was told by one of my co-workers that it was better then Ivanhoes (which is an ice parlor in Upland Indiana and they have some wonderful chicken salad). Hope this help. Have a blessed day.

Regina, I'll be posting a recipe tonight called Chili Chicken Salad that I took to the pool party.  Pamela asked for the recipe so I will post it on the boards tonight.  It is high in protien, low in fat and sugar and tastes really good.  You can make it spicy if you like that sort of stuff.  I do not eat spicy food so mine is flavorful without the bite.
