R.O.D.-Cuban Pork Chops

I made these for dinner last night and the family said they were a "keeper".  I have one left over and I brought it for lunch today.

Cuban Pork Chops

Serves 4

4 pork chops

Salt

2 Tbs. olive oil

4 garlic cloves, crushed

1/3 c. fresh lime juice

¼ c. water

1 tsp. ground cumin

Black pepper

 

Brown lightly salted pork chops in oil at medium heat for 2 or 3 minutes.

Turn chops, adding garlic, lime juice and water to the skillet.

Cook, uncovered, turning once or twice until done and syrupy juices remain. (8-12 minutes)

Spoon sauce over chops, sprinkle with cumin and pepper.

Calories 295; Total fat 21 g; cholesterol 75 mg; sodium 69 mg; potassium 417 mg; Carbohydrates 3.0 g; fiber 0.2 g; sugars 0.4 g; protein 23 g

I actually just had the left over one for lunch and it was VERY good!  Definately a "keeper"!
And SO easy to make!  I realized this morning that I put 1 1/4 cups of water, so I was waiting FOREVER for it to reduce to a "syrup", but it was still really good.
