R.O.D.-???????Please read
Hi there all my Illinois friends!
I'm thinking that my original idea of Recipe of the Day was not fully understood.
I LOVE cooking, tweaking recipes and sharing them with all of you.....BUT the "R.O.D." does not belong to me exclusively.
PLEASE, please, please feel free to post and contribute whenever you find a new recipe or try something that you find works very well.
I love to try new things and get new ideas, and I know that I am not the only "foodie" on this board. So come on! Let's start sharing with each other! I'm guessing that it could be like the Daily Roll Call where one person shares one recipe per day/thread. That way, it we need to go back through the posts to find something, it will be much easier.

Ooops! I didn't understand that we could/should all share recipes. I'd like to participate, with some caveats:
--I am NOT a major foodie, so my recipes are simple.
--Most of my recipes are DS-friendly (high-protein, without a second glance at fat content and only a little attention to carbs).
So, if I come across any recipes that won't kill or harden the arteries of a RNYer or LapBander, I will post it.

I had the kick-butt duodenal switch (DS)!
HW: 344 lbs CW: 150 lbs
Type 2 diabetes and sleep apnea GONE!

Here's a yummy recipe, courtesy of Val on the DS forum.
Flourless Peanut Butter Cookies
1 cup peanut butter
1 egg
1 tbsp vanilla
1 cup Splenda
Mix and roll into balls (about walnut sized) and flatten with fork dipped in Splenda. Bake at 350 for 12 minutes.
TIPS
-Do NOT overcook -- they will get crumbly since there's no gluten
-Peanut butter is naturally low sugar - the low sugar kind only reduces it by 1g per serving.
-If you're picky about artificial sweeteners, I've done a 3/1 with splenda and sugar to cut the after taste and it's good. Presently, I do full-splenda in the cookies, and roll in regular sugar and that's good too. I've also added semi-sweet chocolate chips to shake things up.

2.9g of protein
107 calories
5.6 g of total fat
