R.O.D.-Sweet Potato Pie

At the Rockford group the other night, a new member who is pre-op, was worried that he could never have Sweet Potato Pie again.  I told him that he should not worry.....with a little working, most all foods are permissible.  That got me on a "mission".  I looked up a recipe, re-made it to be more friendly, then adjusted it again to see the difference in the nutritional stats.  I found it to be an interesting lesson and thought I would share:
(This would still be a "treat" and not an everyday item.)

Directions

In a mixing bowl, cream butter and sugar.

Add eggs; mix well.

Add milk, sweet potatoes, vanilla, cinnamon, nutmeg, and salt; mix well.

Pour into pie shell.

Bake at 425 degrees for 15 minutes.

Reduce heat to 350 degrees; bake 35-40 minutes longer or until pie tests done.

Cool; Store in refrigerator.

Serves 6-8

Made Over Sweet Potato Pie #1 

1/3 c. butter, softened (you could possibly change this to something else, but I like cooking with butter)

½ C. Splenda No Calorie Sweetener

2 Eggs, Lightly beaten

¾ C. evaporated skim milk

2 C. sweet potatoes, mashed

1 tsp. Vanilla

½ tsp. cinnamon

½ tsp. nutmeg

¼ tsp. salt

9 “ pie shell, unbaked

 

8 Servings

Calories 297; Calories from fat 147 (49%); Total Fat 16.4g; Cholesterol 68 mg; Sodium 344 mg; Carbohydrate 33.3g; Fiber 2.1g; Sugars 14.6g; Protein 5.1g.

 

 

 

Made Over Sweet Potato Pudding

 

1/3 c. butter, softened

½ C. Splenda No Calorie Sweetener

½ c. Egg Beaters

¾ C. evaporated skim milk

2 C. sweet potatoes, mashed

1 tsp. Vanilla

½ tsp. cinnamon

½ tsp. nutmeg

¼ tsp. salt

(1 c. pecans, ground & 1/4 c. butter, melted can be used in place of a crust, but the nutritional stats do not include this).

 

8 Servings

Calories 147; Calories from fat 75 (51%); Total Fat 8.4g; Cholesterol 21 mg; Sodium 186 mg; Carbohydrate 13.8g; Fiber 1.6g; Sugars 3.1g; Protein 4.4g.
