R.O.D.-French Toast-less Casserole

I got this recipe from the Yahoo Grads Board.  I don't think I could eat 1/4 of this recipe, so my serving sizes would probably be a bit smaller.
I have not tried it yet, but it sounds delish.  I hope to get to it this week.  It would be good for soft stage and above, I think......

French Toast-less Casserole

Serving Size : 4

1 cup ricotta cheese
1 1/2 cups low fat cottage cheese
8 large eggs -- beaten
1/4 cup half and half
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon freshly ground nutmeg
1/4 cup Splenda Granular


Preheat oven to 350 degrees. Spray an 8" square baking dish with
nonstick spray. In a large bowl, whisk all ingredients well. Pour
into prepared baking dish and bake 45-50 minutes, until knife inserted
in center comes out clean. Remove from oven and let rest 5 minutes
before cutting. Serve with sugar-free maple-flavored syrup if
desired.

I have made something similar to this and you cook it in the frying pan like an omelet. It is amazing that there isn't any bread or flour in it.

This sounds easier.
