Chicken Lickin'
Servings: 8 (regular)
3 lbs. chicken legs, thighs and/or breasts
½ tsp ground ginger (or 1/4 tsp fresh)
½ tsp chili powder
16 oz. canned tomatoes
1 large onion, chopped
4 oz. mushrooms, sliced & drained
1 clove garlic, minced
1 ½ tsp salt
½ cup light cream
2 tsp paprika
Rinse the chicken parts and pat dry. Brown the chicken on all sides.
Place the chicken in the slow cooker.
Combine all the other ingredients except the cream together. Mix well. Pour over the chicken. Cook on LOW for 8 to 10 hours. Stir in the light cream just before serving.
