Pecan Pie Recipe

Easy Pecan Pie

3 egg whites
1 cup of chopped pecans
23 ritz crackers
1 tsp vanilla flavoring
1 cup of splenda for baking or sugar
butter

Preheat oven to 350*.   Crush 23 ritz crackers to meal like consistency.  Chop pecans and add to crackers mixing well.  Butter a pie plate generously.  Pour pecan and cracker mix in pie plate.  Beat egg whites adding cup of sugar slowly and vanilla flavoring.  When stiff, pour over pecan mixture and bake at 350* for 25 minutes.  Top with cool whip if desired.
