I thought about you today as I was making a new soup for my family!  It's for the crock pot so I thought I would post it for you and anyone else who enjoys using the crockpot!  If you have left over ham you can use it all up!!!

Bean Soup with Ham
  • 8 ounces Great Northern beans, soaked overnight, drained
  • 4 cups water
  • 2 (8 oz.) cans tomato sauce
  • Seasoned salt and pepper to taste
  • 2 med. potatoes, diced
  • 2 carrots, shredded
  • 2 small onions, chopped
  • 1/2 to 1 cup diced ham
In a kettle, cover beans with fresh water; bring to a boil, reduce heat, then simmer for 30 minutes. Drain beans. Combine beans and remaining ingredients in Crock Pot. Stir. Cook on low 8 to 10 hours. Adjust seasonings.

Thanks Becky!  With all of the ham left over, this is a great way to use it!

I also make Turkey Stew with our leftover Turkey...or Turkey and Dumplings or Turkey Pot Pie.
