The standard disclaimer: every surgeon is different and will have different requirements and diets. Your surgeon and dietician are the best judges for this.
I'm on a modified version of my dieticians' plan. Since I'm still not hungry at 3 months out, they're permitting me to stay on a measured 2 ounces per meal and 1 ounce of fruit sometime during the day. It works for me, but not everyone is on that sort of plan (even most of the people in my support group).
When I spoke to my dietician last week, they mentioned that I was approved for salad, if I was desperate, and that I could probably eat more than 2 ounces since lettuce contains a lot of water.
As for the rest of it...the ground beef is completely out under my plan until after a year. I also had to sign a pledge not to set foot nor tire in a fast food restaurant for a year. That's not as a judgment, I'm just saying I don't know what's in a Fiesta Salad other than the lettuce and cheese.
So, I'd recommend you ask your support team if it's all right. You can eat more lettuce than you'd think, but other than that, I'm not sure what your plan is.

I have no problem eating tons of salad, about 2-3 cups! I was nervous in the beginning, but the nutrionist said it consists mostly of water and the salad dressing helps it slide down easier and as long as I'm full, I'm fine. I use fat free dressing and usually add chicken or shrimp and have it for a dinner meal. I even crave salads at this point.
