Protein Power Soup
I made this sopup three times and still don't trie of it. Its really yummy and has spinach I need for iron.
Each time I'm on for a day or two I loose 2-3 lbs!
Protein Power Soup

3Tbs Olive Oil
3 Cloves Garlic
1.5 Onions
3 Cups each zucchini and yellow squash
3 cups chicken broth
2 cans diced tomatoes
3 cans chicken broth
6 cups fresh spinach (I used one pack of frozen spinach)
In a large saucepan sauté oil, onions and garli****il golden. Add vegetables (except spinach). Coo****il tender.
Add chicken, tomatoes and broth. Bring to a boil. Reduce heat to simmer for 10 minutes. Add spinach coo****il wilted.
Makes 6 servings 269 calories, 25 grams protein, 14 g fat, 11 carbs, 5 g fiber

I think you put chicken broth twice instead of chicken. I found the recipe online:
3T Olive Oil
3 cloves garlic
1.5 onions
3C each zucchini and yellow squash, sliced, or 3C frozen mixed veggies
3C diced cooked chicken or 3 (5-oz. each) cans chicken, drained
2 cans (14.5 oz.) diced tomatoes
3 cans (14.5 oz. each) seasoned chicken broth
6C fresh baby spinach or 3C frozen chopped spinach, thawed and squeezed dry.
In a large saucepanover medium heat, add oil, garlic and onions; coo****il onions are transparent and beginning to become golden. Raise heat to medium high, add remaining veggies except spinach and coo****il just tender.
Add chicken, tomatoes and broth; bring to a boil. Reduce heat and simmer for 10 minutes. Add spinach and coo****il just wilted.
Makes 6 servings.
Per serving:
269 cals.; 25g protein; 14g fat (3g saturated); 62mg cholesterol; 11g carbs; 5g fiber; 1498mg sodium; 2g sugar.
