Protein Perfect Salmon

I've never eaten salmon before the surgery. Every health book I read talks about the high protein and health benefits of salmon. I had into in a restaurant a few weeks ago and liked it. Ever since its been a main part of my diet. I tried several recipes. It's a great source of protein and has all kind of health benefits. I made the first filet oven steamed- perfect. Used the leftovers chilled in a salad. I made another filet tonight with a sweet bourbon sauce (There are tons of rated recipes at AOL key word recipe- look up salmon). I'm thrilled to find such a versatile food. Smoked salmon is great cold in salads or with cream cheese for breakfast. Canned can be eaten out of the can or mixed with potato pancakes, etc. The New England Journal of Medicine reported that those with the highest blood levels of omega-3 fatty acids were more than 80 percent less likely to die suddenly from heart disease. 40% less likely to have a stroke. The October 2000 American Heart Association Dietary Guidelines encourage all Americans to consume fatty fish (such as wild salmon) at least twice a week, as these fish are particularly high in Omega-3 fatty acids which have been shown to protect against heart disease. Few single foods bring as many valuable contributions to the table in significant quantities as Salmon. It is an excellent source of high-quality protein, containing all the essential amino acids. Salmon contains vitamins A, D, B6 and B2, as well as niacin and riboflavin. Calcium, iron, zinc, magnesium and phosphorus are also present in appreciable amounts in this choice seafood. Hi Robin, I couldn't agree with you more about the health benefits of salmon. I just wish I could develop a taste for it. When I was a kid, we would go to the pow wows on the Tulalip/Snohomish reservation in Washington. There was plenty of salmon caught that morning and smoked over an open fire, available for anyone to eat. That was wonderful. That has been the only salmon I have liked. I've tried it a thousand different ways and can eat it, but it doesn't float my boat. I keep eating it though because it is sooo good for me. Connie
