Nancy B's Tropical Fruity Protein Dessert
Tropical Fruity dessert :
Okay...I decided to create a treat for myself and took it to a local WLS support meeting and it was well received.
fat free graham crackers
large container of Cool Whip LIGHT, thawed
one large sized box of Jello Light dry ingredients( do not add water)
one container of Fat Free/skim milk ricotta cheese
one can ofunsweetened canned pineapple, drained
one can of unsweetened mandarin oranges segments, drained
one cup of unsweetened coconut
LINE a 9 X 13 pan with the fat free graham crackers
MIX 1 large container of LIGHT Cool Whip with one container of fat-free ricotta cheese
ADD 1 cup of unsweetened coconut, one drained can of crushed unsweetened pineapple, one drained can of mandarin orange segments in pear juice, 1 tsp cinnamon and the dry ingredients of an orange JELLO LIGHT
I used a hand mixer to blend it all well (later cleaned off the walls)
SPREAD over the graham crackers and let this set for an hour in the fridge
TOP with another container of LIGHT Cool Whip
SPRINKLE with hemp granola or crushed nuts
